Artichoke AntipastiSun-Dried Tomato Antipasti
Ingredients

2 red pepper 5 Sacla' sun-dried tomatoes, drained and chopped 85g anchovies, sliced 250g mozzarella, chopped handful olives olive oil

Instructions

Preheat the oven to 220°C, Gas Mark 7. Cut the peppers in half and scoop out the insides. Drizzle with olive oil and place in the oven for about 20 minutes or until soft. Take the chopped tomatoes, olives and sliced anchovies and mix together in a bowl with a little olive oil. Remove the peppers and spoon the mixture into the pepper. Take a small piece of mozzeralla and place on top of the mixture. Continue the same method for all pepper halves. Return to the oven for about 3 minutes or until the cheese has softened. Serve alongside a selection of antipasti.
