6 thin slices toasted bread
2 fresh tomatoes
1 jar Sacla' Sun-Dried Tomato Pesto
handful basil leaves
1 tsp oregano
2 garlic cloves
3 tsp extra virgin olive oil
1 aubergine
salt and pepper
Chop the garlic into small slices, add oil, basil, oregano, salt and pepper and leave to marinade for about half an hour.
Slice the aubergine thinly lengthways and place under the grill on a medium heat for about 20 minutes or until it is soft and golden.
Take a slice of bread and drizzle with the oil marinade. Place 3 slices of tomato, 1 slice of aubergine and spread a thin layer of pesto over it.
Cover with another slice of bread and repeat the process until all ingrediants are used.
