Goat's Cheese and Sun- Dried Tomato Chicken

  • 1/2 jar Sacla' Sun-Dried Tomato Paste 6 slices streaky bacon 2 skinless boneless chicken breasts 100g goat's cheese, sliced

Preheat the oven to 200°C, Gas Mark 6. Take one chicken breast and slice in half, opening it up like a butterfly. Be careful not to slice all the way through. Place a few slices of goats's cheese and a thick layer of Sacla' Sun-Dried Tomato Paste down the middle and fold back over the chicken. Cover the whole chicken breast in a thin layer of tomato paste and then wrap the bacon slices around tightly. (3 slices per breast.) Place on foil and scatter over any remaining goat's cheese. Cook in the oven for about 25 minutes or until the chicken is cooked through. Tip: With the remaining paste you could stir fry in some vegetables as a side dish.
