Sicilian Aubergine Stew

  • 3 tbsp Olive oil
  • 2 Aubergines, small and chopped into bite size pieces
  • 1 Onions, finely chopped
  • 250g Puy lentils, ready cooked
  • 150g Sacla’ Free From Creamy Tomato Stir-in


  1. Heat half the oil in a large pan and add the aubergine
  2. Season and cook for about 5-8 minutes, or until starting to turn golden
  3. Remove and put to one side
  4. Heat the remaining oil in the pan, add the onion and cook for a few minutes until soft
  5. Stir through the lentils, add the aubergine back to the pan
  6. Add the Sacla’ Stir-in
  7. Top up with a little hot water from the kettle and let it gently simmer for 15 minutes
  8. Stir occasionally and top up with a little hot water as it needs
  9. Taste and season some more
