Grilled Mackerel with Warm Potato Salad
Matthew Fort is one of Britain’s leading food writers and is witty, knowledgeable, passionate and discerning. He also appears regularly on television, most recently on Great British Menu. He loves Italian food and these two recipes are from Sicily.

Chorizo, white bean and pesto soup
Silvana Franco is an inspirational and innovative food writer, stylist and TV presenter with a lot to say about food. And we are sure this recipe will get everybody talking.

Pesto Aubergine Bake with Creamy Saffron Sauce
Catherine Fulvio grew up on a farm in Ireland and married an Italian and now runs Ballyknocken Cookery School in Co. Wicklow (well worth a visit) as well as being a TV chef & food writer. Look out for her brand new book too, "Catherine’s Family Kitchen".

Simple Pasta Dressing
We’re lucky enough to have known Henrietta Green since the start of the UK business back in 1991, and she’s been a great friend ever since. We so admire her tireless enthusiasm and campaigning for the very best of great British food – and we love this recipe for a simple pasta dressing, made from ingredients found in most respectable food lovers' kitchens. What Valentina Harris doesn’t know about Italian food isn’t worth knowing! She teaches, runs events, consults, writes, broadcasts and runs cookery holidays. And she’s written more than 20 books. Wow!

Helena Lang loves rustling up tasty meals for her family and friends, and this recipe is one of her favourites. She has many years experience on top womens’ glossy magazines and now, as Editor of Sainsbury’s Magazine, she crafts each monthly edition to appeal to busy working women who love to cook.

Chicken and Pesto Lasagne
Mitzie’s new book "Mince!" has just won the world Gourmand single subject cookbook award for the UK, and this delicious recipe for Chicken Pesto Lasagne is taken straight from it. It contains over 100 fabulous, frugal and very very tasty dishes.

Olive Oil Poached Rabbit
Phil Vickery does English cooking brilliantly and his puddings are perfectly supreme - a combination which places him as one of Britain's favourite chefs. We spent some fun days with him in Italy recently, where he fell in love with this traditional recipe for rabbit in olive oil.
