250g of farfalle 1 tbsp of extra virgin olive oil 125g of smoked streaky bacon, cut into matchsticks 1 garlic clove, finely chopped 1 tbsp of flat-leaf parsley, chopped 1/2 jar of Sacla' Vine-Ripened Tomato and Mascarpone Stir Through sauce Grana Padano shavings to serve
Bring a large pan of water to the boil, add the farfalle and cook until the bow ties are al dente. Meanwhile, fry the bacon in the oil until crisp and golden, remove from the pan and blot the pieces on kitchen paper. Next, fry the garlic and parsley for one minute, stirring frequently, reduce the heat and add the Vine-Ripened Tomato & Mascarpone sauce. Cook gently for three minutes. When the pasta is cooked, drain and divide it into serving bowls you've warmed up minutes before. Spoon over the sauce and mix thoroughly. Sprinkle the crispy bacon matchsticks on top of the pasta, adding generous shavings of Grana Padano cheese to the bow ties. No doubt about it, its the best dressed pasta in town.
