Coriander Lamb Kebabs

Fresh Coriander Pesto
Ingredients

1 1/2 tbsp Sacla' Coriander Pesto 150ml natural yogurt 1 tsp ground cumin 300g / 10oz lean lamb, diced 1/2 small onion, cut into large chunks 2 large pitta breads roughly chopped lettuce

Instructions

Mix the yougurt and pesto together, then divide the mixture into two. Stir the cumin into one half of the mixture and pour over the diced lamb. Take one piece of diced lamb and place on a skewer, followed by a piece on onion. Repeat the process until all skewers are full. Place the kebabs on the grill and cook for about 8 minutes continually turning. The lamb should brown through and the onion become golden and soft. Warm the pittas in a toaster and open up. Stuff the pittas with the lamb, onion and lettuce, drizzling over the remaining minty yogurt to serve.
