4 cod fillets
Parma ham - 3 slices per fillet
1 x 190g jar Sacla' Roasted pepper pesto
4 tbsp Creme fraiche
Preheat your oven to 160 degrees. Lay 3 slices of Parma ham onto a strip of cling film and place a cod fillet in the middle. Mix 4 tbsp of creme fraiche with 2 tsp of Sacla' roasted red pepper pesto and spread a spoonful of the mixture over the cod fillet. Use the cling film to lift and wrap the parma ham over the cod. Repeat for the other 3 fillets.
Transfer them to a baking sheet and bake for 15-20 minutes.
Serve with steaming new potatoes and a crisp salad.
