4 skinless boneless chicken breasts 4 tsp Sacla' Classic Pesto 2 tbsp olive oil 100g / 4oz cheddar cheese, grated 12 cherry tomatoes, quartered
Turn the grill on high Take each chicken breast and place in-between 2 pieces of cling film, and then beat firmly with a rolling pin to flatten by a third. Heat the oil in a frying pan and cook each chicken breast for about 2 minutes on each side, or until cooked through. Spread the Sacla' Classic Pesto over each chicken breast and then top with the cheese and tomatoes. Place under the grill for about one minute or until the cheese is melted. Serve with a salad.
