175g campanelle pasta (or shape of your choice)
1 tbsp of olive oil
150g red onions, roughly chopped
2 large garlic cloves, crushed
175g courgettes, thinly sliced
190g jar Sacla' Spicy Pepper & Tomato Stir Through sauce
1 tbsp of balsamic vinegar
3 level tbsp of freshly grated Parmesan cheese
3 level tbsp of pinenuts, toasted
sea salt and freshly ground black pepper
Parmesan shavings to garnish
Cook the pasta in boiling water so its ready for this quick and easy sauce.
Meanwhile, heat the oil in a large, heavy-based frying pan. Add the red onions and crushed garlic and saut them for three or four minutes, or until softened.
Add the courgettes and cook for another two or three minutes.
Pour over the Spicy Pepper & Tomato sauce and heat it through thoroughly.
Remove it from the heat and sprinkle over the balsamic vinegar, parmesan shavings and toasted pinenuts.
Season to taste.
Drain the pasta, introduce it to the sauce and encourage them to mingle.
