Sun-Dried Tomato Antipasti
Ingredients

3 thick slices of white bread with the crusts removed 75ml of vegetable oil handful of Sacla' Sun-Dried Tomatoes, finely chopped 2 Cos lettuces 50g of Grana Padano cheese shavings FOR THE DRESSING: 1 egg, beaten 1-2 garlic cloves, crushed 1 tbsp of Worcestershire sauce 1 tbsp of lemon juice 1 tsp of Dijon mustard 125ml of olive oil sea salt and freshly ground black pepper

Instructions

Cut the bread into a good handful of cubes. Heat the vegetable oil and fry the bread until golden brown all over. Drain and blot on kitchen paper. Now put the egg, garlic, Worcestershire sauce, lemon juice and mustard into a bowl, and mix until smooth. Gradually whisk the olive oil in until the dressing becomes thick and creamy. Season well. Tear the lettuce into rough pieces and toss it with the Sacla' Sun-Dried Tomatoes in a large salad bowl. Drizzle with the dressing, and sprinkle the croutons and Grana Padano cheese on to finish it off. It's great as a starter or even better as a light lunch with strips of lean chicken, crispy bacon or freshly grilled prawns.
