1/2 x 190g jar Sacla' Classic Basil Pesto (or Organic Basil Pesto)
250g Gnocchi
handful of grated Parmesan cheese
handful of fresh basil leaves
For the tomato salad:
4 large tomatoes, sliced (try a mix of vine-ripened red, yellow and cherry tomatoes)
275g buffalo mozzarealla cheese, thickly sliced
2 tsps Sacla' Classic Basil Pesto
2 tbsps Extra Virgin Olive Oil
10 -12 fresh basil leaves
Slice the tomatoes and mozzarella and layer on a plate before tucking a few fresh basil leaves in here and there for colour and sprinkling lightly with a little salt and freshly ground pepper.
Meanwhile, in a pan of salted, boiling water, cook the gnocchi accoring to the packet instructions (usually about 3 minutes). When the gnocchi is ready, drain and return to the pan, then stir in half a jar of Sacla' Classic Basil Pesto. Divide between two bowls, shower with grated Parmesan and finish with a few fresh basil leaves.
A colourful, delicious lunch or dinner in less than 10 minutes. Buon Appetito!
