2 tbsp Sacla' Classic Pesto 4 large Sweet Potatoes 65g mushrooms, diced 50g Grana Padano, grated 2 handfuls of fresh rocket
Preheat the oven to 200°C, Gas Mark 6. Pierce the potatoes and bake for 45 minutes or until cooked through. Saute the mushrooms for 5-6 minutes or until soft. Place the mushrooms, rocket and cheese in a bowl and mix together with the pesto. Slice the potatoes in half lengthways and spoon out the centre flesh. Place in the bowl with the mushrooms, rocket, cheese and pesto mix. Share the mixture evenly back into the potato skins, and sprinkle over any remaining cheese. Cook for 6-8 minutes or until all warmed through.
