4 x 125g (4oz) salmon fillets, skin on
4 tbsp Sacla' Classic Basil Pesto (can be done with either half a jar or a whole jar)or Sacla' Fresh Classic Basil Pesto
50g (2oz) fresh white breadcrumbs
25g (1oz) Parmesan, grated
1 Preheat oven to 200C (180C fan)gas mark 6. Arrange the salmon fillets on a non-stick baking tray. Spread 1 tbsp of the pesto on top of each fillet. In a small bowl, mix together the breadcrumbs and Parmesan, then press a quarter of the mixture on top of each fillet.
2 Bake the salmon fillets for 10-12 min until the fish is cooked through. Serve hot or cold with a crisp green salad or seasonal vegetables.
