4 handfuls of salad leaves
285g jar of Sacla' Artichokes, drained
2 tbsp of fresh parsley leaves
FOR THE DRESSING:
2 garlic cloves
3 tbsp of extra virgin olive oil
grated rind and juice of 1 small lemon*
sea salt and freshly ground black pepper
Drain the Sacla' Artichokes and pop them into a serving bowl with the salad leaves and parsley. (Yes it really is as easy as that.)
All it needs now is a fabulous dressing, which you can make by crushing the garlic with the sea salt and whisking it together with the oil and the lemon juice.
Season with black pepper and drizzle over the salad to serve. No more tricky than the first bit.
* Hint: Wherever possible buy unwaxed lemons for dishes where you're using the grated rind. Most lemons are coated with a wax to make them shiny, but it can spoil the citrusy flavour.
