Sun-Dried Tomato & Garlic Sauce
Ingredients

225g of small new potatoes, washed & scraped
100g of green beans
1 tbsp of extra virgin olive oil
200g of chicken breast, cut into strips
1 red onion, sliced
2 tbsp of Sacla' Sun-Dried Tomato & Garlic Stir Through sauce
12 cherry tomatoes
a handful of black olives
1 tbsp of lemon juice
lemon wedges to garnish

Instructions

Boil the potatoes and when they're nearly ready add the green beans and cook for three to five minutes until everything's tender. Drain and put to one side.

Now heat the oil in a frying pan, add the chicken strips and onion slices, and cook for a good ten minutes turning frequently.

Stir the Sacla' Sun-Dried Tomato and Garlic Stir Through sauce into the pan and continue cooking for a further five minutes.

Add the cooked potatoes and beans along with the cherry tomatoes and olives and bubble for two minutes.

Stir-fry for two minutes. Remove from the heat and add the lemon juice. Stir to mix well.

Serve immediately garnished with chunky lemon wedges.

Alternatively, allow to cool and serve on a bed of salad leaves garnished with quartered hard-boiled eggs.
