4 baking potatoes
110g cream cheese (eg. Philadelphia cheese)
190g jar Sacla' Classic or Wild Garlic Pesto
few rocket leaves
70g pancetta cubes or chopped bacon (optional)
Preheat the oven to 200˚C, 400˚F, Gas Mark 6.
Place the potatoes on a baking tray and bake on the top shelf of the oven for about 45 minutes or until soft and cripsy.
If using, scatter the pancetta/bacon onto a small ovenproof dish and cook on the middle shelf of the oven for 5-7 minutes, shaking the tray once or twice, until crisp. Drain on some kitchen paper.
Remove the potatoes from the oven, make a criss-cross in each, spoon over the cream cheese, then the pesto, scatter with the pancetta and arrange some rocket leaves on top. Dive in immediately!
