1 packet of ready-to-roll puff pastry
300g of creamy cheese (philadelphia)
1 jar of Sacla' Italian Oven Roasted Tomatoes (avaiable in Waitrose or from the Sacla' online shop)
2 tbsp of extra virgin olive oil
sea salt and freshly ground black pepper
Preheat the oven to 180°C/365°F, Gas Mark 4.
Put the cream cheese, salt and pepper in a bowl and mix them well.
Roll out the puff pastry to make a circle and place it on a baking tray. Cover with the seasoned cream cheese almost to the edge, try and leave a 2cm gap all the way round.
Pop into the oven and bake until the pastry is golden brown. Allow it to cool slightly.
While it's cooking, drain a jar of Sacla' Italian Oven Roasted Tomatoes and use them to garnish the quiche. Serve it lukewarm or cold, and always with confidence.
