Mushroom Parmigiana

Organic Basil Pesto
Ingredients

1 jar Sacla' Organic Basil Pesto
15 black pitted olives, minced
350g mozzarella, sliced
100ml extra virgin olive oil
15 basil leaves
200g fresh tomatoes, sliced or tomato sauce
oregano
4 portobello mushrooms

Instructions

Place the portobello mushrooms in an oven dish and spread a thin layer of Sacla`green pesto over each one.

Lay a slice of mozzarella onto each, along with the tomatoes and some black olives on top.

Sprinkle with oregano and extra virgin olive oil and bake in the oven at 200°C for 10 min or until the cheese melts.

Garnish with basil leaves and serve hot.
