Filetti means filleted. And we've put these succulent 'fillets' of tomatoes, grown and marinated in Piedmont, into a slow oven to roast before introducing them to our peppery wild rocket.
 
But go easy on the cheese. We've already added some distinguished year-old Parmigiano Reggiano into the sauce for you. This rich and saucy sauce will cling to your pasta like it's holding on for dear life.

Italian Red Onion & Gorgonzola Sauce

One of the oldest Italian cheeses; Gorgonzola has been journeying to the UK since about 1900.  Our little jar uses 'piccante'; slightly thicker and bluer than its 'dolce' counterpart, bringing a sumptuous, mellow taste to the product.  Mixed with sweet Italian red onions and plump vine-ripened tomatoes it's a sensation you have to try. 
Delightful with a robust pappardelle and great simply straight from the jar spread on bruschetta or crostini.

Spicy Tomato & Pepper Sauce

We've plucked plump ripe Italian tomatoes right from the vine, combined them with sweet red peppers and added a kick of chilli for exuberance. Stir it through pasta, add a snowstorm of parmesan and then tell your taste buds to brace themselves.
Alternatively spice up a Welsh rarebit the Italian way. Spread the sauce on crusty ciabatta, top with grated cheese and slip under the grill for a 'rare bit'.

Because they're perfect when they've been left to become plump and ripe in the glorious Mediterranean sunshine . They're even better when they meet and mingle in this robust, chunky stir through sauce.
 
Serve it with a good penne when you can see it cling to the pasta, inside and out. Or, as a secret weapon, try it on your next batch of bruschetta for brunch.
