Artichoke Antipasti

Artichoke Antipasti

Why should our artichokes be a staple of every store cupboard? Because when there's nothing to eat, one day you'll open the cupboard door and find tender quarters of Italian globe artichokes, traditionally prepared with flat-leaf parsley looking irresistible in a clear golden oil.
Release them into a pasta sauce of crisp bacon and creme fraiche or scatter them through a green salad using a handful of black olives and thick shavings of Parmesan cheese on top.
