Recco is a suburb of Genoa in the Ligurian region of Italy: it’s not particularly beautiful having been rebuilt in the late forties and early fifties after it was bombed during World War 2.

But it does have one particularly special attribute of note, and that is its Focaccia al formaggio, made with Stracchino cheese.

This focaccia has a crispy paper-thin crust and a middle of molten, oozy fresh cheese. You will find it in every bakery and restaurant in the town and it’s absolutely delicious.

Our favourite comes from Ristorante da Ö Vittorio and is worth a detour.
